Why do chefs wear clogs, and lean over the plate of food so closely when they are plating it?

I can%26#039;t stand that! LOL

Why do chefs wear clogs, and lean over the plate of food so closely when they are plating it?
I don%26#039;t know about clogs, but I do know that the pizza place where I work, you are required to wear non-slip, CLOSED-toe shoes. I guess clogs are alright, but I cannot understand how people can wear them comfortably when they must move so quickly, turn fast and hard, and other such difficult movements, without finding themselves shoe-less! I always tell new employees that working at the pizza place is a %26quot;body-contact sport.%26quot; You%26#039;re GOING to bang into other people as well as other objects, and such strains put on footwear, I would think, that the more %26quot;secure%26quot; the footwear, the safer one is.





As for leaning over the plate, it is an unconscious form of concentration. There are times when I am concentrating on placing the pepperonis on a pizza so INTENSELY, I find myself doing that %26quot;bending from the back%26quot; leaning over. Then I wonder why by back is hurting me so much, what with the combination of the tension and stress! I sometimes have to catch myself, straighten up my back, and remind myself that I can perfectly well see and do my job standing upright with proper posture.

Reply:When you say clogs, I think you mean Crocs which are known to be slip resistant. In a kitchen, there are a lot of things that get spilled on the floor. So if someone isn%26#039;t slipping on lemon juice, it%26#039;s the mops suds from cleaning up messes. The crocs help to keep them from falling down because a restaurant kitchen is so tense and usually intricate. A falling person usually grabs for something and ends up pulling that down with them. If that thing happens to be a person will a boiling pot of some expensive veggie or sauce...well, I think you see where this is going.





Now, about the leaning over thing. Chefs are constantly smelling food, tasting food, serving food with the sauces and lettuce bits just so. They are concentrating hard when they serve up a dish and when you concentrate, don%26#039;t you lean into something as if being closer will solve all of your problems? When you don%26#039;t understand what your computer is telling you, out of instinct, don%26#039;t you squint and lean in? So, chefs bend over their plates to 1-smell the food and 2-concentration.

Reply:do they???? they probably wear clogs same as a surgeon wears clogs they dont wear them out side so no germs are on them,,,as for leaning over food,,,,cant say i have ever heard of that
Reply:I ware clogs because they are very comfortable. I ware Dansko%26#039;s. I have been for about 12 years.


As for leaning over the plate, I also work very close to my food, It helps me to see the plate better and to feel closer to the food. I guess it come down to. Are you a chef? If not you probably would not understand the answer I gave you anyway.
